Aspartame precursor synthesis in water miscible cosolvent catalysed by thermolysin

The synthesis of the dipeptide N-benzyloxycarbonyl-L- aspartyl-phenylalanine methyl ester, aspartame precursor, catalysed by thermolysin in aqueous and aqueous methanolic solutions was studied.
