Unwanted material are discarded while primary food are used for further processing. Food processing operation also uses enormous quantities of water which are consequently discharge as a polluted effluent. The waste are contain high concentration of biodegradable organic material and suspended solid. As a result it has a high BOD and extremes of pH conditions. The solid waste from pineapple canning process was estimated about 40–50% from fresh fruit as pineapple peals and cores. Analysis of sugar indicates that liquid waste contains mainly sucrose, glucose and fructose. The waste contains very little nitrogen and soluble protein and elements such as Fe, Ca, Mn, Zn, Cu, Cd, Na and K, and potassium is the highest elements. The sugar content in solid waste was glucose and fructose of 8.24 and 12.17%, no sucrose on this waste. The moisture, nitrogen total, ash, lipid and phosphorus content were 87.5, 0.83, 4.0, 0.15 and 1.0%, respectively.
