The nutrient values of the sweet potatoes also are well-known as it is rich with vitamin A and carbohydrate. It also contains many bioactive chemicals including antioxidant which can treat many free radical diseases or reactive oxygen species (ROS). However, the natural antioxidants by sweet potatoes are rarely been used in pharmaceutical industry as synthetic or chemical antioxidant are widely used and mostly preferred. This thesis will reveal the findings from the study in order to reveal the total antioxidant capacity and activities of different parts from two types in two sweet potatoes, Hannah Yam and Jewel Yam. This study also used different solvents in order to study the interaction of the different polarity that can attract different polarity of molecules. Two antioxidants assay which are DPPH scavenging activity and ABTS methods are used to determine the antioxidant activity. Data obtained also can be additional information to the pharmaceutical or any industry also to improve the nutrient composition database. Natural antioxidant from sweet potatoes would give ideas for the future research in investigating the potential health benefits.
